Healthy Gingerbread Cookies

  • 6 Tablespoons molasses
  • 1 ½ cups coconut sugar
  • 1 cup melted coconut oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups almond flour
  • ½ cup coconut flour + ¼ cup for decoration
  • 3 teaspoons ginger
  • 2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 2 teaspoons baking soda
  • ½ teaspoon salt


  1. Preheat oven to 350 Fahrenheit.
  2. In a large bowl combine your molasses, coconut sugar, melted (and fully cooled) coconut oil, eggs, and vanilla extract.
  3. In a separate bowl combine your almond flour, coconut flour, ginger, cinnamon, ground cloves, baking soda, and salt.
  4. Add your dry ingredients to your large wet ingredient bowl and mix together until smooth.
  5. Chill dough for 30 minutes-1 hour.
  6. Roll dough out to 1 inch think and cut with a gingerbread man cutter or roll into balls.
  7. Top the gingerbread men or roll balls into coconut sugar.
  8. Place your cookies on a parchment paper lined cookie sheet.
  9. Bake for about 10-13 minutes.
  10. Allow cookies to cool and enjoy!
