Healthy Strawberry Rhubarb Crumble

1. 2 cups sliced strawberries

2. 2 cups sliced rhubarb

3. 1/4 cup local honey

4. 1 cup rolled oats

5. 1/2 cup almond flour

6. 1/4 cup coconut oil, melted

7. 1 teaspoon cinnamon

8. 1/4 teaspoon salt


1. Preheat your oven to 350°F 

2. In a mixing bowl, combine the sliced strawberries, sliced rhubarb, and honey. Mix until the fruit is evenly coated.

3. In another bowl, mix together the rolled oats, almond flour, melted coconut oil, cinnamon, and salt until well combined. The mixture should be crumbly.

4. Spread the fruit mixture evenly in a baking dish.

5. Sprinkle the oat mixture over the top of the fruit.

6. Bake in the preheated oven for 30-35 minutes, or until the fruit is bubbling and the topping is golden brown.

7. Remove from the oven and let it cool for a few minutes before serving. Enjoy!
