  • 1 cup cottage cheese
  • ½ cup pumpkin puree
  • 1 teaspoon Vanilla extract
  • ½ teaspoon pumpkin pie spice
  • 2 Tablespoons Honey or Maple Syrup
  • Splash of milk or milk alternative of choice
  • Chopped nuts, optional
  • Cinnamon, optional


  1. Add to a blender: cottage cheese, pumpkin puree, vanilla extract, pumpkin pie spice, honey or maple syrup, and a splash of your milk or milk alternative.
  2. Blend until smooth- add more milk if needed to reach desired consistency. Should be the consistency of a typical cheesecake.
  3. Dish between two small ramekins.
  4. Optional: top with a sprinkle of cinnamon and chopped nuts of choice
  5. Move to the fridge to allow it to chill for about 4 hours.
