No-Bake Peanut Butter Oatmeal Cookies

Ingredients

1. 1 cup rolled oats

2. 1/2 cup peanut butter, or your nut butter of choice

3. 1/4 cup honey 

4. 1/4 cup dark chocolate chips

5. 1/2 teaspoon vanilla extract

6. Pinch of salt

Directions

1.In a mixing bowl, combine rolled oats, peanut butter, honey, vanilla extract, and salt. Mix well.

2. Fold in the dark chocolate chips until evenly distributed.

3. Take small portions of the mixture and roll into balls then flatten into cookie shapes.

4. Place the cookies on a plate or tray lined with parchment paper.

5. Chill in the refrigerator for about 15-20 minutes to firm up.

6. Once set, serve and enjoy!
