Pistachio Crusted Salmon

  • 4 salmon fillets (about 6 ounces each)
  • 1 cup shelled pistachios, finely chopped
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges, for serving
  • Fresh parsley or dill, for garnish (optional)


  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a small bowl, mix together the Dijon mustard, honey, olive oil, salt, and pepper.
  3. Place the finely chopped pistachios in a shallow dish or plate.
  4. Pat the salmon fillets dry with a paper towel. Brush each fillet with the mustard-honey mixture, making sure to coat the top and sides.
  5. Press the coated side of each salmon fillet into the pistachios, ensuring a good coating of nuts on top.
  6. Transfer the pistachio-crusted salmon fillets to the prepared baking sheet, nut-side up.
  7. Bake in the preheated oven for about 12-15 minutes or until the salmon is cooked through and flakes easily with a fork. The cooking time may vary depending on the thickness of the fillets, so keep an eye on them to avoid overcooking.
  8. Once cooked, remove the salmon from the oven and let it rest for a few minutes.
  9. Serve the pistachio-crusted salmon fillets with lemon wedges on the side for squeezing over the fish. Garnish with fresh parsley or dill, if desired.
