It’s Finally Pumpkin Spice Season! Enjoy this yummy Pumkin Spice Over Night Oats Recipe to celebrate 🎃

Ingredients
– 1/2 cup rolled oats
– 1/2 cup milk, or milk alternative
– 1/4 cup pumpkin puree
– 1 Tablespoon chia seeds
– 1/2 teaspoon pumpkin pie spice (can add additional cinnamon, nutmeg, and cloves, to taste)
– 1/2 teaspoon vanilla extract
– 1 teaspoon honey (or sweetener of choice) – Chopped nuts as topping (optional)

Directions

  1. In an airtight container, combine the rolled oats, chia seeds, and pumpkin pie spice. Mix until well combined.
  2. Add the milk (or milk alternative), pumpkin puree, vanilla extract, and honey to the oat mixture. Stir well until all the ingredients are fully combined.
  3. Seal the container and refrigerate it overnight, or for at least 4 hours. This allows the oats and chia seeds to absorb the liquid and soften.
  4. The next morning, give the mixture a good stir. If the oats have absorbed a lot of liquid and the mixture is too thick, you can add a splash of milk (or milk alternative) to achieve your desired consistency.
  5. Top your pumpkin spice overnight oats with chopped nuts for some added crunch. Feel free to customize this recipe to your liking with additional toppings such as dark chocolate chips, or a little extra cinnamon on top.
