Roasted Sweet Potato Bites

  • 3 Sweet potatoes
  • 8 oz of Goat cheese
  • 1 bunch of Fresh basil
  • 1 8oz bag of roasted pine nuts
  • 1 4oz bag of dried cranberries
  • Hot Honey
  • Salt
  • Pepper
  • Flakey sea salt, to taste


  1. Preheat your oven to 375 Fahrenheit.
  2. Wash and dry your sweet potatoes.
  3. Slice into .5 inch thick round slices. Place the slices onto a parchment lined cookie sheet, drizzle with olive oil, and season with salt and pepper. 
  4. Roast the sweet potato slices for about 45 minutes or until a fork can pierce the potato slices easily.
  5. Allow the slices to cool for about 5 minutes.
  6. Then top with Goat cheese, chopped basil, roasted pine nuts, and dried cranberries.
  7. Drizzle the sweet potato rounds with hot honey.
  8. Top off with flakey sea salt, to tate.
  9. Serve and enjoy!
